DEHYDRATED GARLIC

          Ancient Indus valley civilization has discovered the medicinal attributes and savors the taste of garlic some 6000 years ago. Since then, India is one of the biggest producers and consumers of fresh garlic. Other ancient cultures like Egyptian, Jiahu (Chinese), Roman Empire, etc., have also relied heavily on garlic for its medicinal benefits. In India, garlic is grown in almost all states and needs mid dry weather and suitable for most soils. However, Rajasthan, Madhya Pradesh, and Gujarat produce a significant amount of fresh garlic. The Garlic (Allium sativum) is wildly cultivated vegetables of the Allium family. The compound bulb consists of 6 to 34 cloves, which are surrounded by a common thin, white, or purple papery sheet.

In many food items such as baked foods and soups, fresh garlic may not be suitable, and dehydrated garlic is preferred.           For preserving the garlic over a longer time, the fresh garlic bulb is processed via the air-drying process, and the final product is commonly known as dehydrated garlic or dried garlic flakes. Initially, the fresh garlic is washed using the hypo treatment to reduce the bacterial content and then processed by the chopper/slicer machine. Thereafter, the sliced garlic is dried at different stages using the convection heat process at 40 to 55 °C by circulating hot air at 140 °C to 160 °C temperatures. Finally, it is passed via the air-cooling system to lower the temperature to 20°C. This dried garlic is widely recognized as the dehydrated garlic cloves or simply garlic cloves. The dehydrated garlic flakes are vastly popular globally (mostly in the European nations, North America, and Middle East Africa) due to its strong and spicy aromatic flavor. The dried flakes have a shelf life of more than two years at 10-15 °C.
